Sigep 2019: food and technology
The ice cream, pastry and bread making market seen at the 40th edition of Sigep in Rimini showed us its most diverse side. consisting of connected IoT machines: real usability of use, management and maintenance.
The paradigm has become moved from mere marketing use, in which IoT, 4.0 and Cloud were the backdrop to prototypes in demo, for real use to enhance the characteristics of products in their use in the field.
This approach elevates companies that have been able to invest and pursue smart and concrete projects as market references.
A first example is Naboo, the professional oven from Lainox, a Venetian company of the ALI Group which has developed an integrated system that allows the entire recipe preparation process to be managed via the Cloud. In the Lainox Cloud, Naboo is not alone, but we find Neo, the blast chiller that can can also be transformed into a temperature maintainer and, if necessary, into a cooking tool. This is a very high quality product. which, if connected with Naboo, guarantees impeccable service, eliminating mishaps and delays, thanks to deferred preparation and temperature maintenance.
Another use of the Cloud within the professional kitchen is MultiFresh® by Irinox, a group founded in 1989 just outside Treviso. &` Thanks to the FreshCloud® technology, the blast chiller is always connected with the web app and allows you to keep the history of processing cycles in order and constantly updated and to automatically receive all HACCP reports.
Another interesting project is bakeAPP 4.0 by Polin, one of the most great realities industrial manufacturers of ovens and machines for bread, pastry and biscuits. bakeAPP is the remote management software for the Polin oven, ideal for those who need to control several points of sale or decentralized production. &` a system developed to network more ovens, even more; bakeries, receive reports on their functioning, or obtain data on production and consumption, valuable even for those who own only one oven.
The innovations seen at Sigep confirm how industrial production, even in the food sector, is proving to be attentive to IoT technologies, using Cloud connections to give further value to products already of the highest quality.
The bet on the near future will revolve around the development of predictive maintenance algorithms to eliminate machine downtime and, what we saw at the fair, suggests that companies are ready for this future, which is more and more close.
